Grilled Citrus Herb Chicken Salad

Spice up your menu: Try This Delightful Recipe That Will Wow Your Patrons!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons (juiced)
  • 2 limes (juiced)
  • 2 oranges (juiced)
  • 3 cloves garlic (minced)
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup fresh parsley (chopped)
  • Mixed greens (arugula, spinach, and romaine)
  • Cherry tomatoes (halved)
  • Cucumber (sliced)
  • Red onion (thinly sliced)
  • Feta cheese (crumbled)
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, whisk together olive oil, lemon juice, lime juice, orange juice, garlic, basil, parsley, salt, and pepper.
  2. Add the chicken breasts to the marinade and let it sit for at least 30 minutes.
  3. Grill the chicken over medium-high heat until fully cooked (about 6-7 minutes per side).
  4. Slice the grilled chicken and serve over mixed greens with cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Drizzle with additional lemon or lime juice if desired.
